Jean-Claude Brugel, Meilleur Ouvrier de France 1996, is new Chef of the restaurant L’Hirondelle at Thermes Marins Monte-Carlo

Committed to product quality, perfect cooking and precise flavours, Chef Jean Claude Brugel will perpetuate the work of his predecessor, Jacky Oberti, while adding a creative note and technical aspect to the already reputable cuisine of the restaurant L’Hirondelle. “It’s a real privilege”, states Brugel, “to bring my knowledge to refined, balanced cuisine inspired by the seasons and the Mediterranean”.


Following in the footsteps of Le Vistamar at the Hotel Hermitage, Thermes Marin Monte-Carlo has joined Prince Albert II of Monaco Foundation in the initiative to promote responsible consumption of seafood products. L’Hirondelle is now a partner of the Mr. Goodfish programme at the Monte-Carlo Société des Bains de Mer.


Thermes Marins Monte-Carlo, represented by General Manager Christine Zoliec, and the Prince Albert II of Monaco Foundation, represented by Bernard Fautrier, made L’Hirondelle’s commitment official in the presence of the group’s Purchasing Director Dimitri de Andolenko and new Chef Jean-Claude Brugel.


Jean-Claude Brugel joined the Monte-Carlo Société des Bains de Mer Group in 1992. He achieved international renown at the Monte-Carlo Beach Hotel, where he put his talent to work for a demanding clientele. In December 2011, he took over the kitchen at the Brasserie du Café de Paris on the Place du Casino, revisiting classic high-end brasserie cuisine. Member of the Compagnon du Tour de France organisation, Brugel has demonstrated his tremendous expertise throughout his career in various competitions. He was awarded the Meilleur Ouvrier de France title in 1996.


With a panoramic terrace overlooking the Mediterranean, the restaurant L’Hirondelle offers a breathtaking view of the Port and the Rock, and dishes in harmony with the centre’s treatments.
