From 31 March to 10 April 2015, 7 Martiniquan students between the ages of 18 and 20 will be cooking in the kitchens of the Monte-Carlo Bay Hôtel & Resort under Chef Marcel Ravin.

When the training programme was launch last November, Chef Marcel Ravin pledged to become a sponsor of this new facility. Ravin has taken his new role very seriously, visiting the students in his native Martinique and welcoming them into his kitchens at the Monte-Carlo Bay Hôtel & Resort. 

 

Originally, Patrice Cardon, teacher at the Lycée Hôtelier Nord Caraïbes hotel school, decided to create this local initiative additional training (FCIL). This unique training programme is open to students up to the age of 26 who are CAP or Bac Pro graduates. The aims of the training programme: showcase local Martiniquan gourmet cuisine, bring chefs and producers closer together, increase knowledge of culinary techniques, work on Marcel Ravin’s dishes and finish the year with an internship in Monaco.

 

The students will sleep in rooms used by seasonal hotel staff. A once-in-a-lifetime adventure thus begins. They’ll cook in the kitchens, wait tables in a Michelin-starred restaurant, receive cooking courses from their sponsor, talk with local producers, create recipes together, participate in a photo shoot for a 15-recipe cookbook, meet students from the Monaco hotel school, and more.

The comprehensive programme will surely be a life-changing experience for the young apprentices.
