The chef of the restaurant Elsa, Paolo Sari, proposes discovering the oysters aptly named the “Pearls of Monte-Carlo” from 13 to 28 October.

The Monaco Marine Hatchery and Paolo Sari: not just a meeting but a common vision.

The local company specialised in edible oyster hatchery and the Executive Chef at the Monte-Carlo Beach see eye-to-eye on the importance of buying locally and ecological concerns.

 

The true treasure of the sea is the oyster known as the “Pearl of Monte-Carlo”, found at a depth of 12 metres off the Port de Fontvieille in waters characterised by exceptional biodiversity. These oysters have a delicate flavour with notes of hazelnut.

 

How can we not combine these natural wonders with an exceptional champagne?!

 

The Dom Pérignon Vintage 2003 champagne has fine bubbles, a clear colour and good intensity with a subtle saline end note that makes this champagne the perfect accompaniment for these oysters.

 

It is precisely this natural combination of flavours that Chef Paolo Sari proposes discovering at his “Oyster and Champagne Bar” from Saturday 13 to Sunday 28 October 2012.
