There’s no finer way to spend the summer than dining on the terrace of the Salle Empire, overlooking the intricate breath taking place in the Place du Casino. Situated on the ground floor of the Hôtel de Paris Monte-Carlo, the restaurant’s terrace is one of the best places to admire the Casino de Monte-Carlo square.

Together with his team, Chef Philippe Gollino – the right-hand man of the hotel’s executive Chef Franck Cerutti – pays homage to the bountiful treasures of the Mediterranean, adding a fresh new twist to traditional flavours and celebrating exceptional ingredients for food that strikes the perfect balance of decadence and refinement.

Chef Franck Cerutti

Franck Cerutti has been working with passion in the kitchens of the Hôtel de Paris Monte-Carlo restaurants for 23 years. Perched on the eighth floor of the hotel, on the Grill terrace*, the cook who worked for 30 years with Alain Ducasse happily talks of his fondness for the Riviera, for quality products and for the art which he has been practising since arriving in Negresco in 1978.
