From late May onwards, the hotel’s Winter Garden lobby, its arcades, and the adjoining terrace will be transformed, unveiling a new bar that revives the dome inspired by the Eiffel School.
In late May, the Hôtel Hermitage Monte-Carlo introduces Gustave, a venue designed like a sequence of intimate spaces nestled at the heart of the palace. In the lobby located opposite the main entrance, the hotel’s pathways converge toward this setting, which unfolds from the Rotunda beneath the stunning glass roof of the Winter Garden. From there radiate new spaces to enjoy a drink from mid-morning through to 1 a.m., first in the lobby, then at the bar, in the hotel’s arcades, or on the terrace. Each space has its own atmosphere, each moment its own intimate setting for conversation in complete tranquility.
Naturally, guests of the Hôtel Hermitage are welcomed here. They mingle with regulars of the Principality, who find in it a discreet and distinctive address where one can also enjoy a selection of signature dishes.
Bourgeois style, contemporary spirit, Belle Époque setting
Gustave is conceived in the spirit of an 18th-century salon, a place where one takes the time to exchange ideas, converse as one breathes in the spirit of the times, and perhaps even rethink the world. Here, one escapes the hustle and bustle, with the awareness of experiencing a moment removed from the outside noise, as if sheltered by a century and a half of history that has passed without ever disturbing it.
Interior designer Shirine Zirak builds upon the fundamentals dictated by the hotel and the spirit of the French Riviera that shaped it. At the same time, menus, uniforms, glassware, and tableware have been crafted by the teams of Monte-Carlo Société des Bains de Mer, blending into a Belle Époque style that embodies an art of living offered by Monte-Carlo with accuracy and authenticity.
Open in the evening, Gustave will be dedicated to high-end mixology: rare spirits, iconic cocktails prepared tableside, and bespoke service.
On the menu, the “light bites” selection focuses on cold dishes imagined by Chef Laurent Piolti.
From lunchtime, or mid-morning, the lobby welcomes its first guests. Later, more intimate alcoves extend from the bar, while terrace tables become invitations to literary reverie.
