Take a sea-view seat, relax to the sounds of pianist Yari, and choose from our exquisite selection of signature cocktails, carefully crafted by our talented mixologists, or opt for a glass of sparkling brut champagne to start the evening with a touch of refinement. To accompany these delights, plunge into a world of tastes and textures with our light and crispy panisse fries, served with a chickpea and sundried tomato dip and Corsican cold meats. Giancarlo Mancino, mixology Italian-style
Reflecting the spirit of this high-voltage mixology bar, we find Giancarlo Mancino, one of the most lauded and respected barmen in the world. Having left his native region of Basilicata to train all over the world in the art of cocktails, he now comes to share the fruit of his 20 years of experience behind the counter at the Bar Sauvage. On his menu you will find the eternal classics of Italian mixology. A “vintage” serenade sung to the airs of the Bellini, Americano, Rossini and the unmissable Negroni. As Giancarlo Mancino’s signature is the selection of vermouths of an exceptional quality. Such as the Mancino Vermouth, drunk neat or in one of the bar’s signature cocktails, the Negroni Monte-Carlo 1956, in tribute to the year when H.S.H. Prince Rainier III married Grace Kelly.

Bar Sauvage’s soundtrack reflects Mancino’s cocktail delights. Find a jazz lounge music playlist by Bon Entendeur, a live piano session, the fiendishly soulful voice of a diva and an electro-disco DJ set. From the beginning of the evening all the way through to the end of the night, the Maona Monte-Carlo and Bar Sauvage roll out their own deliciously retro soundtrack.
