Aquavit was founded in New York in 1987 by owner Håkan Swahn. Inspired by the renowned Operakällaren in Stockholm, the concept has evolved over time while remaining true to its Scandinavian roots. Located in Midtown Manhattan, Aquavit has been a celebrated success for over 38 years.
Born on Sweden’s west coast, Emma Bengtsson developed an early passion for cooking and seasonal ingredients. She joined Aquavit in 2010 as Pastry Chef and became Executive Chef in 2014, earning and maintaining two Michelin stars for over a decade, making her one of the few female chefs worldwide to hold this distinction. Her cuisine offers a modern interpretation of Scandinavian traditions, blending creativity, heritage, and seasonality.
