He has chosen to celebrate these through the Elsa Marcel Ravin’s menu, offering a veritable marine garden, where the delights of the sea harmonise with the treasures of the land. Daring combinations, such as tuna Rossini or iodised celery with plankton, reveal a delicious symphony of tastes, celebrating the richness of our marine environment. From steaming with seawater to conjuring sauces from marine flora, the way in which each flavour of the sea and its treasures is worked enhances the products of the land promising a gastronomic experience that is as ethical as it is delectable.

True to its values, the restaurant is resolutely committed to sustainability and the preservation of marine resources, favouring fresh products from sustainable fishing, certified by the World Ocean Network of the Mr. Goodfish label. As for the plants, they come from the Domaine d'Agerbol, bathed in sunlight and located on the heights of Roquebrune Cap-Martin.
