2020 sees the chef Benoît Witz taking over the reins of the Elsa restaurant, the only Michelin-starred establishment to offer a 100% organic experience, certified by the Ecocert category 3 label. With the arrival of Spring, every last fruit, vegetable and herb inspires the chef Benoît Witz. His new menu is an ode to health and nature, a partition of excellent taste that sings the praises of Mediterranean produce. Le Deck also has a new menu with a sunny and fabulously-fresh Market of Flavours” buffet every Sunday. Here, the chef Pascal Garrigues leads the team with his vision of fresh and creative cuisine inspired by the best of French summer brasseries. The Vigie Lounge & Restaurant continues to be a haven of conviviality in an idyllic setting with touches of Bali. A voyage of the senses lasting all day long, until sunset, accompanied by lounge music courtesy of the resident DJ.

An invitation to relax and let go which combines open-air therapy and yoga in the heart of Monte-Carlo Beach, inviting you to let go during some open-air therapy and yoga. Ever since it won Green Globe certification back in 2014, Monte-Carlo Beach has worked tirelessly to support sustainable development. Everything from its culinary offer (the 100% organic, Ecocert-labelled experience at ELSA) to the transport options (electric vehicles for guest use) demonstrates Monte-Carlo Beach's unswerving commitment to this ethical endeavour. Another example in 2020 is the finalization of the installation of an underwater dyke in the form of an artificial riprap to counter the effects of the ocean’s swell, which will protect the magnificent Vigie peninsula and Saint-Roman beach without affecting existing flora and fauna.
