Just like the Monte-Carlo Bay Hotel & Resort, the Bay Tini expertly blends elegance and exoticism. Get your shakers out and get ready to enjoy this Made-in-Monaco recipe!
10cl coconut cream
5cl fresh cream
5cl rum infused with Kaffir lime leaves
2cl maple syrup
2cl fresh lemon juice
1 passion fruit
3cl Champagne
Timut pepper
In a Martini glass/for 10 servings:
Use agar-agar to make a Piña Colada gel
5cl Havana 3-Year-Old rum / 10cl coconut cream / 5cl fresh cream
In the shaker/for 1 serving:
5cl rum, infused beforehand with Kaffir lime leaves
2cl maple syrup
2cl fresh lemon
One passion fruit
Shake everything to combine, then pour into the glass through a little bar strainer to filter.
Add 3cl of Champagne.
Finally, grind one twist of the pepper mill (Timut pepper) over the glass.
The brief for this cocktail?
The idea was to bring two cocktails together to represent the exoticism and elegance of the Monte-Carlo Bay Hotel & Resort. For exoticism, Kaffir lime and passion fruit – ingredients from our chef, Marcel Ravin. For elegance, Champagne. The cocktail gives an unexpected burst of flavour in the mouth; it is the perfect balance of strength and sweetness.
Our favourite ingredient?
Timut pepper is the secret ingredient in our recipe as it marries incredibly well with all the others. We crush the corns for maximum flavour.
