From late May, the hotel lobby, its arcades and adjoining terrace will be transformed, unveiling a new bar that brings back to life the dome inspired by the Eiffel school.
At the end of May, Hôtel Hermitage Monte-Carlo reveals Gustave, a place conceived as a succession of intimate settings nestled at the heart of the palace. Located in the lobby opposite the main entrance, the hotel’s walkways converge towards this space, which unfolds from the Rotunda beneath the magnificent glass roof of the Jardin d’Hiver. From there, new areas radiate outwards, inviting guests to enjoy a drink from 10 am to 1 am, first in the lobby, then at the bar, along the arcades or out on the terrace. Each space has its own atmosphere; each moment, its own intimate setting for quiet conversation.
Naturally, guests of Hôtel Hermitage are welcome here. But they are joined by regulars of the Principality, who appreciate this discreet and distinctive address, also offering a light dining experience.
Bourgeois style, contemporary spirit, Belle Époque setting
Gustave has been designed in the spirit of an 18th-century salon, a place where one takes time to exchange ideas, converse, capture the mood of the moment, and perhaps even reinvent the world. Here, one steps away from the bustle, with the feeling of experiencing a moment suspended in time, sheltered by a century and a half of history that has passed without ever disturbing its serenity.
Interior architect Shirine Zirak draws on the essential codes defined by the hotel and the spirit of the French Riviera that shaped it. At the same time, menus, uniforms, glassware and tableware have been crafted by the teams at Monte-Carlo Société des Bains de Mer, blending seamlessly into a Belle Époque style that reflects a refined and authentic art of living.
Open in the evening, Gustave will be dedicated to high-end mixology: rare spirits, iconic cocktails prepared tableside, and bespoke service.
The menu features a selection of refined cold dishes created by Chef Piolti.
From mid-morning, the lobby welcomes its first guests. Later in the day, more intimate alcoves extend from the bar, while terrace tables become invitations to quiet, literary reverie.
