- Junmai Daiginjo, Dassai 23 Hayata: This sake embodies the pinnacle of exclusivity and Dassai craftsmanship. A rare cuvée of exceptional precision, produced through extreme rice polishing. Elegant, profound, and unmistakably modern.
- Junmai Daiginjo, Dassai 23: The signature of Dassai: purity, balance, and aromatic finesse. An iconic sake that perfectly represents the house style.
- Junmai, Dassai Future, With Farmers: This cuvée is more than a sake, it is a vision. A committed expression symbolizing the bond between Dassai and rice farmers, crafted as a sake oriented toward the future.
- Junmai Daiginjo, Dassai Beyond: The pinnacle of the Dassai range. A cuvée created without constraints of polishing ratios, guided solely by the pursuit of aromatic perfection and absolute balance.
