Create delicious homemade nibbles with recipes from our chefs

It’s currently hottest trend around: enjoying a drink and some nibbles during a video call with friends or family to get round the loneliness of lockdown. Do you do this too? If so, here are a few easy recipe ideas for your next happy hour video chat.

Healthy & delicious recipes from chef Marcel Ravin

 Enjoying “Happy Hour” doesn’t necessarily have to mean packing on the pounds. Chef Marcel Ravin is here with a few great ideas for you to enjoy guilt-free during your next drinks session! There are both sweet and savoury options to choose from, all of which are light, delicious, and make perfect finger food. Recipes are inspired by the culinary creations at Mada One, Monaco’s top spot for chic snacks brought to you by Marcel Ravin.

If you’re a fan of savoury…

Quinoa Falafel

Ingredients (serves 4)

  • 150 g cooked quinoa
  • 200 g cooked chickpeas
  • 25 g cornflour
  • ¼ red onion, finely chopped
  • 1 clove of garlic, crushed
  • 1 tsp cumin

Method

  1. Preheat the oven to 180°
  2. Combine all the ingredients together, and season with salt and pepper.
  3. Shape into little balls, transfer to a piece of baking paper, and bake in the oven.
  4. Leave to cook for around 20 mins, turning occasionally.
  5. Serve with a natural yoghurt sauce, with a squeeze of lemon juice and some chopped fresh mint and coriander to give it a zing.

Quick Tuna Rillettes with Smoked Salmon

Ingredients (serves 4)

  • 1 tin of tuna in oil - approx. 125 g
  • 40 g smoked salmon
  • 50 g cream cheese
  • Juice of ½ a lemon
  • 20 ml grapeseed oil
  • Lime
  • 1 pinch Cayenne pepper

Method:

Drain the tuna and mix with the smoked salmon, lemon juice and grapeseed oil. Check and correct the seasoning with a pinch of Cayenne pepper and grate a little lime zest over the top.

Avocada

Ingredients (serves 4)

  • 1 avocado
  • ½ red onion, finely chopped
  • 1 tbsp chopped coriander
  • Juice of ½ a lime
  • 30 ml olive oil
  • Pinch of chopped fresh ginger
  • Pinch of turmeric

Method:

  1. Remove the skin and seed from the avocado then mash with a fork.
  2. Add the rest of the ingredients and mix, then season with salt and pepper.
  3. Serve with toast rubbed with garlic and tomato.

Or for something sweet…

Fresh Fruit, Chocolate and Passion Fruit Skewers

Ingredients (serves 4)

  • Strawberries
  • Pineapple
  • Mango
  • Melon

Method:

  1. Peel the mango and pineapple.
  2. Cut all the fruit into 1-2 cm cubes and thread onto wooden skewers, alternating the colours.

For the sauce

  • 150 g chocolate
  • 50 ml almond milk
  • 2 passion fruits

Method:

  1. Heat the almond milk with the passion fruit pulp, then pour over the chocolate.
  2. Mix until smooth.
  3. Arrange the skewers on a platter, and serve the sauce alongside.

Coconut Rochers

Ingredients (serves 4)

  • 150 g grated coconut
  • 50 g sugar
  • 2 egg whites
  • Pinch of cinnamon

Method:

  1. Combine the ingredients and shape into little balls.
  2. Bake in a 200° oven for around 15 mins.
